I mean only taking pictures, recording video, sending them to a pc using bluetooth or adding an a appointment to the cellphone calendar (without sending anything to another person) can they know when these features are being used?
maybe if you have registered yourself for internet or mms or 3G or make video calls the carrier can get to know a bit about the type of phone you are using,whether it has camera and all sort of devices but they will not be able to determine the exact model unless if you have sent configuration mail specifying your mobile phone model.
