I would not suggest a G3 Macintosh for video editing – not even for standard definition video.
A G3 will be a PowerPC chip based computer. It will not run OSX – or if it can, there will be lots of limitations. And it is likely it won’t run with enough RAM to do anything. And while a G5 Mac would be “better”, you are still talking about a 6 year old computer. Not a good thing to be wanting to do heavy lifting – like video editing – on…
Any Intel CPU based Mac should be fine – this will allow use of relatively current versions of OSX and iMovie (important in case the Flip you refer to is recording high definition video).
