how can i mount my camera to my bicycle to get pictures like this?

It looks like a fisheye lens with the camera pointing back up at the rider.

There are any number of camera mounts available. Look for one with a clamp that mounts on whatever part of the bike you want to use. I found some likely ones by doing a search for “camera mounts”. Then you just have go get a fisheye lens for the camera, and experiment with the best position for it.
